Peach & Apple Cobbler

A spin on a classic peach cobbler that is warm and gets you ready for fall.

Ingredients
  

INGREDIENTS FILLING:
  • 2 ripe peaches sliced (about 3-4 cups)
  • 1 small gala apple
  • 3 tbsp honey
  • 1 tbsp lemon or lime juice
  • 1 tsp cinnamon
  • 1 tbsp Italian flour
TOPPING:
  • 1.5 cups Italian flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp honey
  • 1/2 cup heavy cream or water for dairy-light
  • 6 tbsp cold butter cubed (use 7 if making the dairy-light)
  • 1 tsp vanilla extract

  • 1 9 inch round pan

Instructions
 

INSTRUCTIONS
  1. Preheat oven to 375°F, rack on top. In your 9-inch pan, toss peaches and apple with honey, citrus juice, cinnamon, and 1 tbsp flour until coated. Spread even.
  2. The tablespoon of flour in the filling thickens the peach juices so it's not soupy!
  3. Whisk topping flour, baking powder, and salt. Work butter in with fingers until coarse crumbs with pea-sized bits remain.
  4. Stir in honey, cream (or water), and vanilla until just combined — thick, lumpy batter. Don't overmix. Add a splash more liquid if too dry.
  5. Drop spoonfuls of topping over the peaches, leaving gaps for fruit to bubble through. Rustic dollops, not smooth.
  6. Bake on top rack 35-40 minutes until topping is golden and juices bubble at the edges. Cool 15 minutes before serving.
