Spicy Jalepeno Cream Sauce

This Spicy Jalepeno Cream Sauce is spicy and not for the faint of heart! If you're looking to give your pasta a kick, this will do it.

Ingredients
  

  • 6 tbsp butter
  • 5 jalapeƱos thinly sliced (seeds in for full heat)
  • 6 garlic cloves minced
  • 2 cups heavy cream
  • 1.5 cups Romano cheese grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup reserved pasta water

Equipment

  • 1 Stainless Steel Sauce Pan

Instructions
 

  1. Melt your butter over medium heat in a sauce pan. Slice up your jalepenos, then add them to cook about 4-5 minutes until softened slightly.
  2. Add garlic and stir 60 seconds until fragrant. Watch closely so it doesn't burn!
  3. Pour in the cream little by little and reduce heat to medium-low. Simmer 6-8 minutes until it it is thick enough to coat a spoon.
  4. Off heat or low heat (if you're stirring fast enough), stir in the Romano gradually. Add salt and pepper.
  5. Toss with cooked pasta, using pasta water to loosen if needed. Top with fresh jalapeƱo slices.

Notes

No cheese? Reduce the cream for a few minutes longer for body, and salt to taste.
This recipe will cover 1 pound of heavily saturated pasta or 2 pounds of lightly covered pasta.
