- Melt your butter over medium heat in a sauce pan. Slice up your jalepenos, then add them to cook about 4-5 minutes until softened slightly.
- Add garlic and stir 60 seconds until fragrant. Watch closely so it doesn't burn!
- Pour in the cream little by little and reduce heat to medium-low. Simmer 6-8 minutes until it it is thick enough to coat a spoon.
- Off heat or low heat (if you're stirring fast enough), stir in the Romano gradually. Add salt and pepper.
- Toss with cooked pasta, using pasta water to loosen if needed. Top with fresh jalapeƱo slices.
Notes
No cheese? Reduce the cream for a few minutes longer for body, and salt to taste.
