- Combine flour and salt. Work butter into the flour with your fingers until it resembles coarse crumbs. Add water gradually and mix until a soft dough forms — soft and slightly tacky, not sticky.
- Cover and rest 15 minutes.
- Divide into 12 balls. Roll each out thin on a lightly floured surface, about 8 inches across.
- Cook in a dry pan over medium-high heat, 60-90 seconds per side, until bubbles form and brown spots appear. Stack under a towel to keep soft.
Notes
These are great cooked in a buttered pan, or in bulk on a large griddle. Reheat and brown them slightly on a comal.
